The Burgundy MasterclassA Culinary Experience Like No Other
Every year, we open the doors of The Cook's Atelier to guests from around the world who are interested in learning more extensively about the food and wine culture of Burgundy. Our Seasonal Burgundy Masterclass program is a special opportunity for an in-depth and personalized experience at The Cook's Atelier. The week gives you a chance to spend one-on-one time with us where we'll come together to cook in our kitchen and immerse ourselves in the rich culture of Burgundy and French home cooking.
5 days immersed in the finest French cuisine
We’ll begin the program on Monday where we'll meet and greet guests at our Atelier for our first workshop followed by a convivial welcome luncheon that includes a Champagne apéritif and a seasonal menu highlighting the bounty from our favorite artisan food and wine producers and our own kitchen garden. Each course will be paired with the great wines of Burgundy.
During the week, we'll meet each morning to gather around our Atelier teaching kitchen for hands-on cooking workshops and learn the importance of sourcing locally, cooking seasonally, and growing some of the food we cook.
Each of our workshops will highlight classic French cooking techniques, both savory and sweet, and methods every home cook should know. We'll touch on key cooking methods and kitchen rituals, talk through the importance of proper knife skills and the essentials of having a well-stocked pantry, and cover basics such as blanching, braising, frying, grilling, poaching, roasting, sautéing and searing. We'll continue with French butchery techniques, prepare essential stocks and French sauces, preserving, master the art of pastry doughs, desserts and soufflés. We'll review the importance of creating a proper French larder and setting up a kitchen with classic cook's tools and provisions.
Each day at our Atelier, once the masterclass is complete, guests head upstairs to our light-filled dining room where Champagne glasses are filled and toast one another in anticipation of the long French lunch ahead. The zinc-topped table is set in beautiful French fashion with vintage linens and cutlery, fresh flowers, and plenty of candlelight. Guests will enjoy the seasonal menus created from the fruits of their labor, presented in beautifully plated courses. Each course is presented and paired with some of the most extraordinary wines from the Burgundy region (a selection of Premier Cru and Grand Cru wines), demystifying terroir and the art of winemaking. Each season showcases different techniques, methods, recipes, and menus.
Midweek, we will venture out into town in search of ingredients, meeting some of our producers along the way, and learn the importance of sourcing ingredients à la française before returning to our Atelier for the day’s workshop. On Friday, we will enjoy a celebratory day at the Woodland House where we’ll learn the art of cooking with fire on the hearth in the Barn Kitchen, explore the craft of creating your own kitchen garden and living the French way, and enjoy lunch al fresco outside on the terrace. The ‘Woodland House’, an extension of our Atelier and the home of our very own kitchen garden, features a modest stone cottage and renovated barn kitchen which was once a walnut mill dating back to the 1800s. It is where we cook for our family and the people who become family as soon as they cross the threshold. Treating guests to a day at the Woodland House gives us a chance to share the joy we find in living there.
On Saturday morning, we come full circle with a visit to the morning market in Beaune where we introduce guests to some of our favorite local artisan food producers and share the magic of la cuisine du marché before retuning to the Atelier for a final midday farewell.
Guests depart from our Seasonal Burgundy Masterclass program truly inspired and with a deeper appreciation for the art of bringing people together through food.

An experience at The Cook’s Atelier is truly one-of-a-kind as it is so much more than just a cooking school. Guests are immersed in the day-to-day beauty and attention to detail that surrounds. They experience the warmth and hospitality in our kitchen and quickly become fast friends and part of our extended family. Amidst the chopping, dicing and the clanking of copper pots, guests learn practical aspects of French cooking, the importance of sourcing from local artisans, and to embrace the aspect of growing some of the food they cook. And when the program is complete, guests take home much more than just the recipes. They’ll each return home inspired to cook and to share the table with the people who matter most.

*Our cooking classes and workshops fill up very quickly. Reservations are taken first come first serve. Early bookings are strongly advised. All of our culinary workshops are designed for adults, and there may be walking involved. As much as we love little ones, we are not able to accommodate children during our weekly cooking classes and seasonal workshops in consideration of the other guests participating.
**Airfare and lodging are not included, but we are happy to give some of our favorite suggestions regarding hotels and travel arrangements. Evenings are on your own to explore Beaune and to visit some of our favorite local dining spots.

Need somewhere to stay while you’re in Beaune, France? Our pied-à-terre is a short walk from our Atelier. Once the original home of The Cook’s Atelier, it is a beautiful, light-filled two bedroom flat decorated in our Atelier style.

At the height of the season, we open our doors to visitors who are interested in experiencing a convivial cooking class and dining experience. A Day in Burgundy is a day of exploring, cooking, and tasting designed to introduce guests to the gastronomic culture of the region.
